Add garlic to everything. When I turn on the stove the garlic is almost automatically added to the pan. It's so automatic that I don’t even think about. Then, I thought I might want to think more about it. Are you familiar with what I'm talking about?
As much as I love garlic, I thought I should do more. This "recipe" was born. It's more of a "how-to" than a recipe. Once you know "how to" roast the garlic, you will realize how versatile it can be. You can transform it from a simple side in your pan into a delicious addition to all of your favorite dishes.

- Three heads of garlic
- 1 tbsp olive oil

Pre-heat the oven to 350degF. Cut the tops of the garlic heads with a sharp knife so that all cloves are exposed. Use a brush to coat the garlic completely with olive oil. Place it in tin-foil.
Cook
Wrap the cloves tightly to form a package, and then place them on the middle rack of the oven for 30-40 minutes. Or until the garlic feels soft.
Variations
- You can also cut the heads of garlic in half, and then roast them on both sides.
- You can roast the garlic without wrapping it in foil. Simply place the garlic into a cast iron skillet, cover with foil and let it cook.
- The same recipe can be used for as many heads of garlic and you can roast them all at once.

Squeezing the garlic out as if it were a paste is the easiest way to do so. If you prefer to keep your cloves intact, use a knife. The whole clove will come out if you twist the knife and stick it into the side of the garlic clove. If you've roasted the garlic long enough, it should be able to pull the paper away from its side.

Let the garlic cool down completely. Put the garlic into an airtight container in order to avoid any moisture or odors from getting inside. Garlic can be kept in the refrigerator for up to two weeks. Garlic can be frozen. Wrap each clove of garlic in aluminum or plastic and place it in a freezer bag. The garlic should keep for 3 months.
